Keto Cloud Bread With Three Ingredients

Cloud bread is what you make when you want something bread-shaped and there is no flour in the house. Whipped egg whites give it the volume, cream cheese gives it enough body to hold a sandwich, and there is no wheat, no starch, and no sugar anywhere in it.

Ingredients
- 3 large eggs, separated, cold
- 3 tbsp (45 g) full-fat cream cheese, softened
- 1/4 tsp cream of tartar
- 1/4 tsp fine sea salt

Heat the oven to 300°F (150°C) and line a sheet pan with parchment.

Beat the egg whites with the cream of tartar to stiff, glossy peaks — this takes 3 to 4 minutes and is the whole recipe.

In a separate bowl, whisk the yolks with the cream cheese and salt until completely smooth, with no lumps.

Fold the yolk mixture into the whites in three additions, using a spatula and stopping the moment it is combined.

Spoon six mounds onto the pan and flatten gently to about 1/2 inch thick.

Bake 22 to 25 minutes, until firm and lightly golden. Cool on a rack.

- Why is my cloud bread flat?
- Either a trace of yolk got into the whites or the folding went too far. Use a spotless bowl and stop folding while a few streaks remain.
- How should I store it?
- In an airtight container in the fridge for up to 3 days. It softens overnight — reheat in a dry skillet for 30 seconds to bring back structure.
