Fudgy Sugar Free Brownies, Gluten Free and One Bowl

Sugar free brownies usually go wrong in one of two directions: cakey and dry, or gritty from the sweetener. This version stays fudgy because it leans on melted butter and 85% chocolate instead of a big volume of sweetener, and the batter is mixed in one bowl in about eight minutes.

Ingredients
- 6 oz (170 g) 85% dark chocolate, chopped
- 1/2 cup (113 g) unsalted butter
- 3/4 cup (150 g) allulose or granulated erythritol
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup (50 g) unsweetened cocoa powder
- 1/3 cup (40 g) almond flour
- 1/2 tsp fine sea salt

Heat the oven to 350°F (175°C) and line an 8x8-inch pan with parchment.

Melt the chocolate and butter together in short bursts in the microwave or over a double boiler. Stir smooth and let cool for 5 minutes.

Whisk in the sweetener, then the eggs one at a time, then the vanilla. Whisk hard for a full minute — that is what creates the shiny top.

Fold in the cocoa powder, almond flour, and salt just until no dry streaks remain.

Spread in the pan and bake 22 to 26 minutes. The center should still look slightly underdone when you pull it out.

Cool completely in the pan before cutting. Warm sugar free brownies fall apart; chilled ones slice cleanly.

- Which sweetener works best?
- Allulose gives the fudgiest result because it does not recrystallize. Erythritol works but can leave a slight cooling sensation; a monk fruit and erythritol blend softens that.
- Are these brownies keto?
- Yes, as written they are roughly 3 g net carbs per square, thanks to the almond flour and 85% chocolate.
- Can I use coconut flour instead of almond flour?
- Not one for one. Coconut flour absorbs far more liquid — use only 2 tablespoons, and expect a slightly drier crumb.
